Ingredients:
-1 cup all-purpose flour
-1 teaspoon baking powder
-½ teaspoon baking soda
-teaspoon salt
-vegan butter or margarine (keep in mind that not all margarine brands are vegan so you’ll definitely want to read the ingredients), at room temperature
-1 cup sugar
-2 tablespoons light corn syrup
-2 teaspoons vanilla extract
-1/3 cup vegan milk (we recommend soy)
Instructions:
1. Preheat oven to 425 degrees F (220 degrees C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the vegan butter or margarine until it resembles coarse crumbs. Stir in the sugar until well blended.
3. In a small saucepan over low heat, bring the corn syrup and vegan milk to a simmer. Pour the mixture into the flour mixture and stir until just blended.
4. Spoon the batter into the prepared pan and spread evenly.
5. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack for 10 minutes before removing to wire rack to cool completely.
